Healthy Almond Butter Cups

Ingredients:

½ cup coconut oil
1 teaspoon vanilla
½ cup almond butter
½-1 teaspoon liquid stevia
¼ cup unsweetened cocoa powder

How To:

  1. Melt the coconut oil and almond butter in a microwave safe bowl for 30 seconds. Stir and then heat again for 30 seconds. Repeat until coconut oil and almond butter are melted. 
  2. Add cocoa powder, vanilla and stevia. Stir until everything is well mixed.
  3. Line muffin tin with paper liners. Then ladle mixture into the muffin cups. 
  4. Place in the refrigerator until hardened.

This makes 6 large cups or 12 small. You can leave them in the refrigerator for storage or store them in a container on the counter.
