Welcome to the May Pinterest Challenge Blog Hop. The purpose of this Pinterest Challenge is to motivate all the participants of this hop (and you too) to not just pin, but to make it happen! This month, I chose to make an Easy No Bake Cherry Cheesecake. My inspiration came from this pin from I Wash You Dry.

The original pin calls for a graham cracker crust. I chose to make the crust with vanilla wafers and then use some graham cracker crumbs on top. I followed the directions otherwise but the cheesecake mixture seemed to come out a little lumpy. I’ve changed my directions to hopefully fix that issue.

Easy No Bake Cherry Cheesecake

(makes 5 custard cup sized desserts)

Ingredients
  • 8oz cream cheese, softened
  • 1 1/4 cup cold milk
  • 3.4oz instant vanilla pudding mix
  • 1 can cherry pie filling
  • graham cracker crumbs
  • vanilla wafers
Directions

Crush about 5-6 vanilla wafers in each of the 5 custard cups. 

Stir the milk in the vanilla pudding mix, mixing well.

In a separate bowl beat the cream cheese until smooth and fluffy. Add the pudding mix and beat until well combined. Spoon this mixture equally among the five cups over the vanilla wafers.

Top with cherry pie filling.

Right before serving sprinkle the top with graham cracker crumbs.

  10. I used to make these in cupcake form. My family doesn’t like the cherry pie filling though. Boo hoo! I’ll have to try your recipe when I can eat a few and take the rest to a party!
