February Pinterest Challenge Black Bean Salad

Welcome to the February Pinterest Challenge Blog Hop! The purpose of this hop is to motivate us to not just hoard pins, but to make it happen! For this February Pinterest Challenge I decided to make this black bean salad with lime-cilantro vinaigrette. This recipe was pinned from from Once Upon A Chef.

It’s my team’s turn for fat Friday (a day to bring snacks) at work. We decided on a Mexican theme and I thought this recipe would make a great addition. In Texas it is sometimes called Cowboy Caviar. I also made some homemade guacamole and brought a few bags of tortilla chips. The ingredients were modified just a little to fit my dietary needs. I also try to avoid canned products as much as possible so I substituted for those. This was made for a crowd so I doubled most of the ingredients.
Ingredients:
1 lb dried black beans, cooked
12 oz bag frozen corn
3 bell peppers diced
2 tomatoes, chopped
4 cloves minced garlic
1/2 large onion finely diced
2 teaspoons salt
1/4 teaspoon cayenne pepper
1/4 cup sweetener of choice (I used 1/4 teaspoon liquid stevia)
1 cup oil (I used avocado oil)
1 Tablespoon lime zest
3/4 cup lime juice
1 cup chopped fresh cilantro
4 avocados chopped
You just basically mix everything together. I followed the directions for the recipe on the website Once Upon A Chef and it turned out really well! I would definitely make this again! It is fairly quick to put together in addition to being tasty and healthy!

Now this is a cowboy caviar I can get behind! I love how natural your recipe is AND that you used stevia and not sugar. Looks so yummy!
