Funfetti Birthday Cake Cheesecake

Welcome to the May Pinterest Challenge Blog Hop, hosted by My Pinterventures. The purpose of this Pinterest Challenge is to motivate all the participants of this hop (and you too) to not just pin, but to make it happen! This month, I chose to make Funfetti Birthday Cake Cheesecake.
Funfetti Birthday Cake Cheesecake
OK, it’s probably obvious that my daughter has a sweet tooth (comes by that naturally)! For last month’s challenge I made her Sugar Cookie Bars for Easter. This month I am making a Funfetti Birthday Cake Cheesecake for her graduation from Texas State University. She has earned her masters degree in educational leadership and already passed her principal certification test! Of course she loves all things Funfetti (cake with sprinkles mixed in) so this was an obvious choice for dessert. I couldn’t find the birthday cake Oreos called for in the original recipe so I just used the golden ones. It either requires the family size or 2 regular size packages. It also requires quite a bit of sprinkle so I bought this large container and had some left over.
Ingredients:
Crust:
1 package of Birthday Cake or Golden Oreos
3 Tablespoons sprinkles
¼ cup butter
Filling:
3-8oz packages cream cheese
¼ cup sugar
1 teaspoon vanilla extract
1 cup Funfetti cake mix (or 1 cup white/yellow cake mix and just add extra sprinkles)
2 Tablespoons milk
1-8oz container Cool Whip
1 package Golden Oreos (chop 7-10 and make crumbs out of 15-16)
6 Tablespoons sprinkles
I followed the directions from the Life, Love and Sugar website with a couple of exceptions. I followed one pinner’s advice and baked the crust. Also, I only added 1 cup of the crushed crumbs into the cake and saved the rest to sprinkle on top of the cake. I did not add whipped cream to the top as I had to transport the cheesecake 3 hours away. But I did add additional sprinkles to the top.
Overall it was a big success! Everyone at the graduation loved it – including our waitress!

Love cheesecake, especially ones that are easy to make. The funfetti makes this special. Interesting fact (hopefully interesting anyway) we call funfetti ‘hundreds and thousands’ or ‘sprinkles’ here in the UK.
Congrats to your daughter on her academic achievements! I have also done food posts for the last two challenges…guess we like to eat! This dessert looks scrumptious! YUM!

This looks like a very sweet cake indeed! I occasionally buy the birthday cake Oreos to satisfy my sweet tooth’s craving, but I can only eat about 2 before it becomes too sweet. Your cake turned out wonderfully! Congrats to your daughter!

It does seem very sweet but I don’t eat sugar so I didn’t actually taste it! Everyone said it was really good though.
