Gluten Free Strawberry Shortcake, Dairy and Sugar Free June Pinterest Challenge

Gluten Free Strawberry Shortcake

Ingredients:
For the shortcake

1/3 cup coconut oil, melted
4 Tablespoons honey
1 teaspoon vanilla
4eggs
1/3 cup coconut flour
1/2 teaspoon baking powder

For the coconut cream

1 can full fat coconut milk, refrigerated
1 teaspoon vanilla
2 teaspoons honey

Strawberries, sliced and sweetened if desired

I followed Shanti’s directions to make these and they turned out great. I would definitely make them again. So if you or any guests you might be having need allergy friendly foods, this would be an awesome summer dessert to serve!

  12. I don’t have to eat gluten free but I do try to limit our intake of grains and this is a great recipe to try out. I’ve had pretty good luck with coconut and pinned for later.

  14. This looks yummy! I’d really like to try the cream with the coconut milk. I have a recipe for coconut cream pie that uses canned coconut milk & it’s delicious. Definitely going to try this!

  17. I’ve never baked with coconut flour. Does it have coconut flavor? Makes me want to bake something with it to see what it tastes like.

    • It gives it a hint of coconut but it is definitely not overwhelming. It does absorb a lot of liquid so if you cook with it, be sure to add extra liquids. Of course I used coconut oil and coconut cream in this recipe so it has a stronger coconut flavor.

  18. Coconut flour is interesting to work with. I like the flavor for baked goods.
