SF GF Egg Free Chocolate Gingerbread Cookies

Welcome to the December Christmas Cookie Challenge Blog Hop! Today you will find recipes for Christmas cookies from a few of my blogging friends. I am sharing a recipe for Sugar-free, Gluten-free, Egg-free Chocolate Gingerbread Cookies.
Chocolate Gingerbread Cookies
Ingredients:
¼ cup butter, softened to room temperature
2 Tablespoons molasses
½ cup xylitol
¼ cup unsweetened cocoa powder
¾ cup gluten free flour blend with xanthan gum
(if your mix does not include xanthan gum, please add ½ teaspoon)
1 teaspoon baking soda
2 teaspoons gingerbread spice
4 Tablespoons almond milk
sugar free powdered sugar
Directions:
Preheat the oven to 350°. Line a baking sheet with parchment paper.
In a small bowl, mix together the cocoa powder, flour, baking soda and gingerbread spice.
With a mixer, in a medium bowl beat together the butter, xylitol and molasses. Slowly add the flour mixture into this bowl. Then stir in the milk 1 Tablespoon at a time with a spoon until the mixture comes together and forms a ball.
Scoop about 1 Tablespoon of dough at a time and roll the dough between your hands to form a ball. Place the balls on the cookie sheet leaving space for spreading.
Bake for 11-14 minutes. Let cool on pan. Use powdered sugar to dust the cookies if desired.
